A while back I came across a post done by one of my favourite bloggers about animal cookies. It took me only a second to recognize the cookie cutters that she used, as I had just bought a set for my mother for part of her mother's day gift.
I got so excited to see those cute animal cookie cutters come to life that I decided that I would go back to IKEA and buy a set for myself. But sadly they were all sold out.
So I waited and waited, hoping that they would be restocked and to my excitement they were....so I bought a set. Actually I bought four sets because I am weird like that and often buy multiples to keep on hand as quick and easy gifts to give to people.
And then, just the other night as I sat looking out the sliding door window into my garden and feeling somewhat sorry for myself that I didn't get to plant anything this summer, an idea came to me. Why not use the lavender that I planted last year for something?
I had never cooked with lavender but I had heard of people using it in ice cream and cookies, so I began to look up a recipes for lavender cookies. And then with the wheels turning in my head, I remembered Joni's post on animal cookies and I think you can guess where the rest of the story goes.
So without further adieu, I give you...
Lavender Lemon Shortbread Cookies
1 cup butter softened
1/3 cup of maple syrup
1 tablespoon vanilla
2 1/2 cups of flour
a pinch of salt
1 teaspoon fresh lavender flowers
1 teaspoon lemon zest
Cream the butter, maple syrup and vanilla together. Add in the lavender and lemon zest. Slowly add in the flour a cup at a time until the dough is formed. Separate into 2 balls. Wrap in plastic wrap and chill in the fridge for at least 30 mins.
Preheat oven to 350. Roll out dough onto a floured surface. Use your favourite cookie cutters and lay the cookies on an ungreased cookie sheet. Bake cookies for 5 mins. Check on them regularly.

My favourite cookie is a recent find from Pine Cone Camp blog for Yo Yo Cookies. All yummy vanilla-y and custardy with icing in the middle.

I have those same cookie cutters! They were a gift from a friend when we had our second boy. Last winter we made an army of those squirrels (about 10 dozen), iced them, and gave them away to friends and neighbours!

ReplyDeleteFavorite cookie. Mmm...I'm not much of a baker. But I love the peanut butter cookies with a chocolate kiss. I could it about two dozen!
That recipe sounds like it would be amazing and even better when the cookies are shaped like animals! My favourite biscuit would have to be a chocolate afghan. They have the perfect crumbly texture and go great with a cup of coffee.

ReplyDeleteMonster cookies are my fav! My mom always made them for me when I was a wee one. They are essentially oatmeal, peanut butter cookies with m&m's or choco chips. Nom Nom.

I have to pick a favorite??? I'm like a cookie monster! But I think I'd have to say that my favorite is chick pea chocolate chip cookies oh AND chocolate crackle cookies that my friend made me once but I can't because I don't have a kitchen aid and you sorta need one for that.
ReplyDeleteThose cookies sound yummy. There is a tie between my favorite cookies. It's between snickerdoodles and angel macaroons. My mother used to make us snickerdoodles in the Fall, and angel macaroons in the springtime.

ReplyDeleteOh! I would LOVE to win some fun animal cookie cutters!! I'd make some yummy chocolate animal cookies for the babies. I know just the recipe I'd start off with :) Its the same gluten free chocolate wafer recipe that I use for the base of my "thin mint" cookies. They're not MY favorite, but, the babies love them.

Those cookies look very yummy! Were they? My favourite cookie is an old-fashioned down-east Molasses cookie. Yumm! I will check Ikea to see if they still have these. They have such adorable and unique stuff!

SO cute!! Believe it or not, one of my fav cookies is lavender shortbread! I used to get them all the time from a local cafe called Black Honey.
