lunch box adventures

yesterday's menu:

  • home made baby hummus on whole grain bread
  • watermelon

Baby Hummus

1 can chickpeas- liquid reserved
1 lemon squeezed juice
1 clove of garlic
olive oil

This recipe is called baby hummus because I leave out the tahini paste which is a paste made from sesame seeds. Sesame seeds can cause major allergic reactions in young children, so it is best that it is avoided until the age of one or when your family doctor suggests that it is okay to try it.
Smash the garlic with the side of your knife. Throw the garlic into a food processor. Pulse till finely chopped. Add the chickpeas and pulse. Pour in your lemon juice while the processor is whirling. Add olive oil while it is whirling. Stop the processor and check the consistency. If it is too dry, add a bit of the liquid from the can of chickpeas.
I like to make it as described above, then take out some for Noah and then add the tahini paste at the end for us. Tahini paste can be found in most grocery stores.

  3. My darling girl refuses to eat hummus. I must remember that I need to keep trying. Over and over and over again. Her constant favorites remains bananas and cheese. Thank goodness she will also eat a healthy dose of grapes or we'd be in a bit of diaper trouble! ;)
