one morning in the Yukon

Okay, so when you wake up to this on a morning in May...

...I think it's only fair to have this for breakfast...

Whole wheat banana thin pancakes

1 1/2 cups of whole wheat flour
1/2 cup of all purpose white flour
3 large eggs
2 1/3 cups of milk
1 mashed banana
a dash of cinnamon

Mix all together in a large bowl. Take a hand blender and blend till very smooth and no lumps remain. Pour a half cup of the batter into a hot buttered skillet and cook on each side for a minute of two.
Enjoy with vanilla yoghurt, maple syrup and berries.

This breakfast is sure to make any morning a little bit better. Even if it is snowing in the middle of May.

  1. Yummy! (BOO hiss to the snow though!)

  2. Well that is just cruel, jeez. At least you got deliciousss ol' looking pancakes out of it! :)

  3. Wow, I feel for you, I really do. I love snow and the coziness of winter. But I also know what it's like to eventually yearn for green and warmth. I hope both come to you very, very soon!

I just read your previous post 'sometimes' and can relate completely. I also go through moments of being overwhelmed by my blessings, and moments of feeling incomplete and like something is missing.

You are not alone my friend!

    Love, Dawn

  4. I would take that snow any day over this horrible rain we are experiencing on our vacation right now. Send it our way!!

  5. mmmmm those pancakes look delicious! I will trade you some sun for some of your cooking.

Oh goody....I love comments!
