Okay, so when you wake up to this on a morning in May...
...I think it's only fair to have this for breakfast...
Whole wheat banana thin pancakes
1 1/2 cups of whole wheat flour
1/2 cup of all purpose white flour
3 large eggs
2 1/3 cups of milk
1 mashed banana
a dash of cinnamon
Mix all together in a large bowl. Take a hand blender and blend till very smooth and no lumps remain. Pour a half cup of the batter into a hot buttered skillet and cook on each side for a minute of two.
Enjoy with vanilla yoghurt, maple syrup and berries.
This breakfast is sure to make any morning a little bit better. Even if it is snowing in the middle of May.

ReplyDeleteWow, I feel for you, I really do. I love snow and the coziness of winter. But I also know what it's like to eventually yearn for green and warmth. I hope both come to you very, very soon!
