- leftover Mango Red Pepper Salad
- leftover World's Best Potato Salad
Mango Red Pepper Salad:
1 semi ripe mango cut into long slices
1/2 red pepper thinly sliced
1/4 of a small red onion very thinly sliced
small handful of flat leaf parsley chopped
1 small pinch of red hot pepper flakes
salt
juice of 1 lime
olive oil
combine all ingredients together for a delicious summer salad!
World's Best Potato Salad: (adapted from Orangette and family recipes)
3 large baking potatoes unpeeled and washes
1 egg
2 or more tablespoons of real mayonnaise (this is where you control the mayo- to your liking)
1/4 of a small red onion chopped
small handful (roughly 1-2 tablespoons) or fresh chopped dill
salt and pep
small dash of paprika
-Boil the potatoes whole and unpeeled in a pot of salted water. Add the egg to the pot as well. Cook until the potatoes are a firm/soft (until you can pierce the potato with a knife fairly easily) and until the egg is hard boiled. Run the potatoes and egg under cold running water to cool them down.
-Once cool, peel and chop the potatoes. I like to keep my potatoes fairly chunky. Add to a large bowl.
-Chop the egg. Add the egg to the bowl of potatoes.
-Prepare the onion and dill and add to the bowl.
-Add your mayonnaise, salt and pep and at the end sprinkle some paprika on top for colour and a hint of smokiness.

sliced cucumber
then chunks of watermelon
then mangoes
squeeze lime juice over the whole thing
then add chilli powder
(they ususally ad salt to-not me)
i love it and can have it everyday!
These salad recipes sound amazing - I'm definitely going to give them a try!
