spinach squares


This recipe comes from my bestfriend Roxy's mom, however I have altered it slightly. It's a staple in their house and I remember having it as a little girl when I would go to visit. It is a great vegetarian dish that goes very well with brown rice, roasted potatoes or a colourful salad. This would also be the perfect dish to take to a potluck. Enjoy!

2 boxes of frozen spinach thawed and drained
1 cup of cottage cheese
3 eggs
1/3 cup milk
3 table spoons of flour
1/2 cup of crumbled feta cheese
1 teaspoon dried mint (optional)
sliced tomatoes to top the squares (optional)
pepper to taste

Combine eggs, milk and flour. Wisk together until well blended. Add the mint and pepper. Mix in the cottage cheese. Add the spinach, mix well. Fold in the feta cheese. Mix well until all ingredients are combined.

Pour into a buttered glass baking dish and top with sliced tomatoes if you like. Bake for 45 mins at 350 degrees. Let them cool slightly before cutting into squares.

  1. I had no mint on hand but did have peppermint tea...so I cut open a tea bag and sprinkled some of the dry tea leaves into it.

  4. Oh wow, that sounds (and looks) delicious. Too bad I don't have any cottage cheese in the fridge, or else I'd make some right now! Hmmm...maybe I'll make a little trip to the grocery store and we'll have it for lunch tomorrow.
