Today I am loving fresh wholesome good food.
I have to admit, for a while there I hated quinoa. I don't know, maybe it was the texture, maybe I had overdone it once...I just wasn't into it.
But upon arriving to my home and being on a more strict budget, I decided to use what I had on hand and put together this simple and delicious salad.
Quinoa, black beans, a few veggies that we had on hand, green onion and a simple apple cider vinaigrette. It was good. So good infact that I decided to love quinoa once again. So good infact that Noah ate it all up...veggies and all. Score!
Oh, YUM. I, too, once liked quinoa but have recently stopped eating it. Like you said, I think I overdid it for a while there.
