So the beet and carrot salad is quite simple... shred 2 raw carrots and one small raw beet. In a salad bowl layer baby greens mix, shredded carrots then the beets. Its the dressing that makes this salad so yummy...
in a mason jar add
-1 clove garlic (super finely chopped) -1/4 cup olive oil -half of 1/4 cup apple cider vinegar (or more if you like it sour) -a sm tsp of sugar -salt n pep -a sm tsp of dijon mustard
