lunch box adventures

Today's menu:

  • leftover lentil casserole
  • leftover beet and carrot salad


  1. Mmmm, I'm overdue for lentil casserole... looks good! Please post the recipe for beet and carrot salad!

    so the beet and carrot salad..did you roast the beets..Me like-ee the roasted beets...with olive oil and good. the salad sounds great....

  3. So the beet and carrot salad is quite simple...
    shred 2 raw carrots and one small raw beet. In a salad bowl layer baby greens mix, shredded carrots then the beets. Its the dressing that makes this salad so yummy...

    in a mason jar add

    -1 clove garlic (super finely chopped)
    -1/4 cup olive oil
    -half of 1/4 cup apple cider vinegar (or more if you like it sour)
    -a sm tsp of sugar
    -salt n pep
    -a sm tsp of dijon mustard

    shake well poor over entire salad.
