Yum...I don't think there is anything that compares to banana bread. It's a perfectly sweet treat that can be taken as a dessert with tea or a quick bite if you don't have time for breakfast. I add a few extras to mine, ground flax seed and sometimes chocolate chips and chopped walnuts (if I want something more sweet). If I'm making them into muffins I substitute some of the white flour for bran flour.
The recipe says it's for muffins, but you can make them into loaves as well.
Martha Stewart's Banana Muffin Recipe
- 4 (1 1/2 to 2 pounds) ripe bananas, plus 1 for garnish
- 1 cup packed light-brown sugar
- 1/2 cup canola oil
- 1 large egg
- 1 cup all-purpose flour
- 1 cup whole-wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup sour cream (you can substitute plain yoghurt if you like)
- 1 tablespoon pure vanilla extract
